The wine exhibits sweet currant and blackberry aromas with black pepper, anise, toasted oak and notes of molasses. On the palate, flavors of black plum and Bing cherry complement flavors of espresso bean and wet stones. This is a structured wine with excellent depth, flavor and personality. From the Chiles Valley nestled in the Vaca Mountains on the northeast side of Napa Valley. The appellation has a warmer and more continental climate than other portions of Napa. This is because the cooling fog and winds that moderate night temperatures in Chiles Valley retreat earlier then most of Napa after sun rise and thus grapes are allowed long hang-time and freedom to develop full concentrated flavors and complexities in an ideal Mediterranean climate.
After harvesting in the early morning hours to preserve the fresh, cold fruit, the grapes were fermented in stainless steel on the skins for 15-16 days before being pressed off. It underwent 100% malolactic fermentation to smooth out the acid and allow the development of a rich and soft mid-palate. The final blend is comprised of 97% Cabernet Sauvignon and 3% Merlot to bring out a jammy, blue fruit quality.
After it finished second fermentation, it was placed in French oak for 23 months. 75% was in new oak and 25% once-used, both with medium toast.
The quality of the 2012 vintage is nothing less than extraordinary. Ranches throughout Chiles Valley reported this harvest as truly exceptional. The chilly nights and moderately warm days preserved the acidity and kept the sugar content from overpowering the phenolic and physiological ripeness creating well-rounded wines.
